Capella Bangkok’s Stella Unveils a New Cocktail Chapter with Miriam Nini

From the rich heritage of Old Siam to the vibrant present, Stella’s cocktail journey continues—guided by the fresh vision of Miriam Nini, Capella Bangkok’s new Bars Manager.

Stella, Capella Bangkok’s acclaimed riverside cocktail bar, turns the page to a new chapter of its mixology series with Journey into the New Siam. Inspired by the timeless elegance of Royal Thai traditions and the kaleidoscopic energy of modern-day Bangkok, this latest cocktail odyssey captures the Thai capital’s colourful dynamism in an all-new menu of spirited libations, ready to showcase from 30 September onwards.

Unfold the Lotus. Begin the Story.

A recurring character in Stella’s new story is the lotus flower, an emblem of balance, elegance and evolution. Much like this graceful bloom, which rises from the earth to flower with poise, Stella’s team of world-class mixologists elevates familiar Thai ingredients into modern masterpieces, infusing every sip with Bangkok’s complex and ever-changing rhythm.

At the heart of Journey into the New Siam lies a deep reverence for time-honoured Thai recipes, reimagined through refined techniques, bold local flavours, and unexpected flourishes. This latest cocktail collection bridges heritage and innovation, offering a sensory experience that is both rooted in tradition and boldly forward-looking.

Stella’s new menu features a total of 20 drinks, divided into three distinctive chapters:

Chapter 1 – Bangkok and its Evolution: 12 creations inspired by 12 diverse districts of the Thai capital, with each masterfully crafted drink capturing a unique facet of the city’s versatile spirit. Within this collection are eight signature cocktails and four spirit-free, style-full drinks, offering sophistication and refreshment without compromise.

Some of the highlights include:

Mango Moonlight, inspired by the Bang Kho Laem district, a melting pot of Thai, Chinese, and Indian influences. Bang Kho Laem balances riverside nostalgia with the city’s outward stretch, where century-old markets still thrive alongside modern high-rises.

This smoky, tropical concoction is made with Macallan Double Cask 12yo Scotch Whisky, Nam Dok Mai Mango, Tio Pepe Fino Sherry, Mancino Vermouth Bianco Ambrato, Paragon Rue Berry and Ardbeg Ten Years Old Scotch Whisky.

My Thai, a tribute to Pom Prap Sattru Phai. Rooted in the discipline of Muay Thai, this district has emerged as a canvas for Bangkok’s alternative edge, where cutting-edge street art, indie cafés, and bustling night markets colour its storied streets.

This frosty, slushy-like drink combines Bumbu The Original Rum with Havana 3yo Rum, Cha Thai Tea, Coconut Milk and Amaretto Disaronno.

Among the zero-proof standouts is the Dockside (Sabatini 0.0 Tomato Water, Taeng Mo Watermelon, Paragon Timur Berry, Celery and CO2), inspired by the Khlong San district, which, as a former port in the city’s river trade, has evolved into a contemporary hot spot, that still clings to its riverside charms.

Chapter 2 – Stella’s Signature Revivals: 

Seven forward-thinking reimaginations of global classics, boldly reworking each drink’s timeless elegance with a contemporary touch. Highlights include the Umami Martini, a daring blend of Grey Goose Vodka, Patrón Añejo Tequila, Mancino Vermouth Secco, Tio Pepe Fino Sherry, white miso butter and Makrut lime, served ice cold with a bump of Stella’s finest vegan caviar, balancing elegance and intensity in a strikingly modern manner.

Chapter 3 – Drink Like a Local:  

The seasonally changing Ya Dong Experience, a contemporary riff on Thailand’s beloved traditional moonshine, adds another layer of local flair to Stella’s new story. Once revered for its medicinal potency and ritualistic roots, Ya Dong has transformed into a sophisticated, seasonal expression that fuses heritage and innovation.

This immersive journey begins at the bar, where the air is delicately scented with herbs and spices, inviting guests to slow down and savour the moment. Each edition is crafted to reflect the rhythm of the seasons and the ingredients in bloom, offering a singular taste of Thailand’s dynamic landscape.
